Creamy Spiced Spinach

Ingredients:

  • 1 1/2 tablespoons extra-virgin olive oil
  • 1/4 teaspoon(or more) crushed red pepper
  • 5 chopped garlic cloves
  • 1/2 cup chopped green onions***
  • 3/4 teaspoon curry powder
  • 1 pound fresh spinach***
  • 1/2 cup plain non-dairy yogurt OR whole-milk Greek yogurt
  • 1/4 teaspoon kosher salt

Directions

Cook extra-virgin olive oil, crushed red pepper, and garlic cloves in a large skillet over medium-high until garlic begins to sizzle, about 2 minutes. Add green onions and curry powder; cook 2 minutes. Add fresh spinach from your Tower Garden to the pan in batches, stirring until wilted before adding more. Stir in yogurt (or non-dairy substitute) and kosher salt.
